Yeah, yeah, the title has a dirty ring to it, but this week’s mystery recipe from the Red Box happens to be Italian Meat Roll, which looks like a fun recipe and great alternative to pizza for your next book party.
ITALIAN MEAT ROLL
Prep time: 15 min.
Cooking time: 1 hr. 30 min.
1 lb. ground beef
1/2 lb. ground pork
2 tbs. grated Romano cheese
1/8 tsp. garlic powder
1 egg
1 tbs diced Romano cheese
2 sprigs fresh parsley
4 slices salami, diced
2 eggs hard cooked, dieced
1 sliced onion, 4 stalks celery (I hate celery so I would leave that out.)
3 carrots, 1 green pepper (carrots, seriously?)
1 tsp. sweet basil
3 (8oz) cans Spanish-style tomato sauce
Combine first 6 ingredients. Add salt and pepper to taste. Divide mixutre, spread each half on a sheet of wax paper. Line up lengthwise rows of diced cheese, eggs, parsely, salami. With the aid of the paper, roll up mixture. Chill, then brown rolls in fat. (I have no idea how to roll in fat, but please let me know if I can do that some other way.) Add vegetables, sauce and seasoning. Simmer 1 1/2 hours.
Serve with green noodles or spaghetti

You should definitely try incorporating Volpi salami into your dish! It’s some of the best salami I have ever had and adds just the right amount of spice. I work for Volpi, which is why I can actually attest to this.
